Anaerobic natural lot from Finca El Salvador in Santa Ana, El Salvador, produced by Rodolfo Ruffatti. The Portillo variety is a mutated Bourbon discovered by farmer Salvador Portillo on the Santa Ana volcano, developed through decades of cross-pollination. Cherries are macerated for 72 hours in low-oxygen conditions before natural drying. Fruity and expressive without being excessively funky.
