About this lot

Aji Bourbon from Finca Bella Vista (Jhonatan Gasca) in Huila, grown at 1,750–1,800m. Processed using a multi-stage advanced natural method with controlled oxidation, anaerobic fermentation in tanks and bags, and a thermal shock to preserve aromatic complexity. Slow-dried on raised beds. Intense fruit and floral in the cup.
