Nestor, the champion! Nestor Lasso and El Diviso have once again turned up the heat. Well, technically, we’re the ones who turned up the heat—they just filled the fermentation tank. The variety used here was Sidra, a botanical variety that, by definition, represents everything floral, delicate, and fruity in coffee. To make sure it wasn’t too subtle, the coffee cherries were fermented with mosto—the juice extracted from the fruit itself. Everything took place in an oxygen-free environment. Reading this description, I’d probably scroll past and think twice about buying it… but wait! There’s not a trace of kombucha or vinegar here. The coffee is clean, sweet, and tropical. It’s lighter than the Ombligon we had from El Diviso. This is a pro-level coffee. We guarantee a cup worthy of Brewers Cup championships. Nestor Lasso, you are a master.
