Espresso from approximately 25 producers in the Citalá and La Palma regions of El Salvador, partnered with Caravela for over a decade. Double-washed fermentation: 12-hour whole cherry fermentation followed by 12-20 hour parchment fermentation. Dried to 10-11% moisture content. Sold in 200g bags with 14-day resting period.
