The penultimate release in Assembly's 10-Year series, pairing the vibrant fruit character of Sidama with an experimental approach to processing. Ripe cherries are sealed in GrainPro bags and submerged in tanks of cold water for 168 hours; once fermentation is complete the cherries dry on raised African beds, giving a clean and balanced cup bursting with vibrant fruit. The process evolved from an early experiment at Gatta where the sealed bags were placed directly in the river, refined here to water-filled tanks that hold the low temperatures the extended fermentation needs.
