About this lot

Third-generation producer Pastor Ordonez grows this Papayo varietal at El Placer farm in San Agustin, Huila at 1800 MASL. Fermentation involves 8 hours in sealed bags, 12 hours in hopper, 36 hours dry fermentation, then washed and dried on raised beds 18 days to one month.
