From Finca El Paraíso in Piendamó-Tunia, Cauca at 1,960 masl. Intentionally over-ripe cherries undergo 12 hours of anaerobic fermentation in cherry, followed by pulping, re-addition of liquid pulp extract, and 48 more hours of fermentation. A thermal shock wash seals the flavors. Dried in a dehumidifier. The Gesha variety under this process yields an extraordinary cup: grape soda, lemon candy, lavender tea, and incredibly soft florals.
