Dylan Aguilera and his family run Finca Matilde in Costa Rica, named after his grandmother. Roca Junior has a longstanding direct relationship with the family, visiting the farm regularly and sourcing lots such as the San Roque variety (an Africa-originated variety grown in Costa Rica) each year.
