Edgar Erazo is a Honduran coffee producer in Santa Bárbara with whom Black & White Coffee Roasters established a direct-trade relationship in 2017. He grows the Pacas variety and has become known for anaerobic-processed lots, hand-picking cherries at peak ripeness, hand-sorting and floating for quality, then placing coffee in a sealed anaerobic environment before washing and drying on raised beds. Black & White purchases his entire Pacas crop annually, citing Edgar's lots as archetypal of Santa Bárbara's intensely sweet cup profile.
