Roger Chilcon Flores farms 3 hectares of coffee in El Diamante village, San Jose de Lourdes district, Cajamarca region, northern Peru, at above 1,900 masl. He grows yellow and red Caturra varieties and manages the picking, processing, and drying alongside family members who farm adjacent plots. Cherries are pre-fermented overnight in bags, then de-pulped and wet-fermented for 24–36 hours before being dried in a ventilated greenhouse on a wooden patio. Finished parchment is delivered to Jaén for export via Falcon Coffees Peru.
