Quijote Kaffee is a collectively run specialty coffee direct-import roastery founded in Hamburg, Germany in 2013 by Andreas Felsen (Pingo) and Stefanie Hesse. Structured as a worker collective with all 17 members earning equal hourly wages and no profit motive, the roastery sources exclusively from democratically organised small-farmer cooperatives in Honduras, Guatemala, Ecuador, Peru, Brazil, and India, paying a guaranteed minimum of $3.75/lb for Arabica and $3.35/lb for Robusta. Production is self-capped at 186 tonnes per year. Full price calculations, import contracts, and roast profiles are published publicly. Weekly production of 3,600 kg goes live in the webshop every Monday at 7am.
