About this lot

Yeast-inoculated natural from the Encanto Project in Colombia. Produced by Franky Hoyos using a multi-stage fermentation: 70-hour oxidation, 60-hour anaerobic fermentation with yeast inoculation, thermal shock, 48-hour mechanical drying, and 15-day resting phase. Varieties Caturra and Chiroso.
