Jairo owns six farms including Santa Monica, where he grows Pink Bourbon, Java, Papayo and Gesha. He works closely with sons Carlos and Felipe, who bring specialty expertise, advancing sustainable farming, fermentation innovation, and unique processing experiments through Cofinet.
