Imbibe Coffee Roasters is a Dublin-based specialty roaster founded in 2018 by Gary Grant in Dublin 8, after Brexit made importing roasted beans from the UK unsustainable. Ninety percent of their output is organic specialty coffee, with primary sourcing from the ASOPEP cooperative in Colombia. Imbibe was the first to bring Panama Geisha to Ireland and supplies around 80 cafes and restaurants across the island. They donate a minimum of 1% of all revenue to Women's Aid and have funded infrastructure projects for origin farmers. Monika Winiarek, 2014 Irish AeroPress champion, heads their roasting and training.
