About

Shoebox Coffee is a Chicago-based micro roastery focused on small-batch, ultra-light roasting that emphasizes acidity, fruit-forward character, and floral notes. Founded by Maxwell Mooney, who previously roasted at Jimmy Beans Coffee, Shoebox conducts origin trips to build direct relationships with farmers, sourcing lots such as Mejorado, Sidra, and Gesha from Hacienda La Papaya in Ecuador. New coffees drop weekly, roasted and shipped fresh. The roastery operates primarily as an online retailer with no brick-and-mortar cafe.
